On the other part, people believe that butter chicken originated in Delhi during the 1950s and it was first prepared by Kundan Lal Gurjal. He shifted to Delhi from another region of India due to political insurgency and settled in Delhi in 1950. Then he started some new tandoori dishes in his famous restaurant named Moti Mahal, and all of his dishes were prepared in clay oven. Later, he started using leftover ingredients and marinated them with some tomatoes and butter. Then he started serving chicken tandoori dipped in this gravy and a  new dish thus formed was called “butter chicken”. Moti Mahal became famous in New Delhi and Gujral started adding more spices in his signature dish. He started using garlic, coriander, ginger, cumin and other spices in his dish. Today, you can find this dish garnished with almonds, cashew nuts and raisins.
